Recipe: Everything Bagel Tofu Sandwich With Heirloom Tomatoes and Hummus

- 1 package extra firm Tofu
- 2 everything bagels, halved
- hummus of your choice
- 1 heirloom tomato
- 1 head of butter lettuce
- cheddar cheese slices
- purple Onion
- everything bagel spice mix
- coarse ground pepper
- coarse sea salt
- high heat cooking oil for grill grates
Step 1: Drain the tofu and then cut the block in half lengthwise so you have two slabs about 3⁄4 inch thick. Coat both sides with everything bagel spice mix.
Step 2: Preheat the grill to 500 degrees. Clean the grates and oil with high heat cooking oil.
Step 3: Clean your lettuce leaves, tomatoes, and onion. Slice the tomato and onion into thin slices.
Step 4: Place the tofu on the grill and close the lid. Cook for about 5 minutes, then flip and cook for another five minutes. A few minutes before the tofu is done, add the bagels to the grill to toast. If you're a cheese lover, add cheese to the tofu now so it has time to melt. Remove everything from the grill.
Step 5: Assemble the sandwiches. Spread the bottom bagel half with hummus, then add lettuce, purple onion, tomato slices, a tofu piece, finish off with some more hummus and the bagel top. This sandwich is a bit of a smorgasbord - add any other toppings you love!
