Recipe: Grilled Cherry Tomato Toast with Whipped Feta and Roasted Garlic

  • Quick Briq
  • 2 lbs cherry tomatoes on the vine
  • 1 loaf of fresh Peasant or French bread
  • 1 bulb fresh garlic
  • 8 oz feta broken into chunks
  • ½ cup plain greek yogurt, drained
  • 4 tbsp plus extra Extra Virgin Olive Oil
  • Fresh cracked pepper and coarse Kosher salt


    Step 1: Heat grill to 400

    Clean grill grates and brush with oil. Load a Quick Briq into the Briq pan and heat your Spark to 400F.

    Step 2: Prep the whipped feta

    Combine feta, yogurt, 2 TBSP EVOO in a food processor until smooth. Scoop into a bowl and top with fresh cracked pepper and a drizzle of olive oil.

    Step 3: Prep and roast the garlic

    Slice the intact garlic bulb in half, brush each side with olive oil and place the cut side down on the grill. Roast approximately 10 minutes or until soft and cloves push easily out of skin.


    Step 4: Grill the tomatoes

    Brush tomatoes with olive oil. Place directly on the grill. Roast until skins start to burst.


    Step 5: Grill the bread

    Slice the bread into ¾ inch thick slices. Brush with olive oil and place on grill. Toast until golden brown, turning over as needed.

    Step 6: Plate

    Spread each piece of toast with a roasted garlic glove, then a smear of feta. Top with tomatoes. Drizzle olive oil, sprinkle with salt and cracked pepper.
