Recipe: Skillet Ginger Apple Pie
with Vanilla Bean Ice Cream
It's not a holiday without a pie. And after trying Morgan Ione's recipe for Skillet Ginger Apple Pie, it won't be a holiday in your household without a grilled one.
If you normally go the store-bought route because you think pies are intimidating, take the tip from Morgan Ione and buy a pre-made crust.

Ingredients:
- Everyday Briq

2 refrigerated pie crusts
- 7 cups baking apples (such as granny smith or braeburn)
- 2 tablespoons fresh ginger root grated
- ½ cup butter, melted
- 1 cup packed brown sugar
- ½ cup white sugar + 2 Tbs reserved on the side for dusting crust
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla extract
- ½ tsp salt
- 1 egg
- Vanilla bean Ice cream for serving
Also needed:
- 10 inch cast iron skillet, seasoned but free of savory flavors
- Heat resistant grill gloves
Directions:
Step 1: Peel and core apples
Peel and core apples and cut them into ¼ inch by ¼ inch chunks.
Step 2: Mix pie filling
In a large bowl mix together melted butter, vanilla, brown sugar, white sugar, cinnamon, and nutmeg. Fold in apples and ginger.
Step 3: Place the crust, and fill the pie
Roll pie dough into two discs about 12 inches across. Cut one disc into 1 inch wide strips to make lattice top, place the other in the skillet, pressing into the corners. Fill pie crust with apple mixture. Apply your lattice top (here's a great how-to).
Step 4: Brush pie with egg mixture
Whisk the egg in a small bowl and use a pastry brush to apply it to the top crust, then sprinkle with remaining white sugar.
Step 5: Fire up the grill
Using an Everyday Briq , ignite your Spark and set the temperature to 350F. Create a small sheet pan shape with the tin foil and place on the grill between the grates and pan. This will catch any sugary apple juice overflow and make for easier cleaning Bake for approximately 1 hour or until the crust is golden brown, apples have cooked down and are bubbling. Remove from the grill with a grill glove - the cast iron will be screaming hot!
Step 6: Let cool and serve warm
Let pie cool on a wire rack or stove top. Serve warm with vanilla bean ice cream.
