Meet: The high Heat Briq
The High Heat Briq lets you really bring the restaurant home. Nail steakhouse-quality steak with those ultra hot searing temperatures that achieve the hard-to-get Maillard reaction. Or, even grill Neapolitan-style pizza hot and fast, with the classic, smoky flavor of American hardwood charcoal.
Burn time: 30-45 minutes
Temperature range: 600-900°F
Wood variety: Hardwood Oak Charcoal
Great for: Neapolitan-style pizza, seared tuna, seared steak, high-heat breads (naan, pita)

Note: If you plan to make pizzas, remove the grill grates and place the pizza stone over the heat spreader. Remove the cutting board from the side table.
1. Open the bag and immediately place the Briq into the drawer with the notched corner on the Briq lined up with the notch in the Briq pan.
2. Hold the ignition switch to the right for two seconds, then turn it back to center. Set your temperature between 600-900°F.

Working the Spark Lid to Your Advantage
Hot Tip: To maximize the heat when grilling at 800°F+, shut the lid after the briq is visibly lit and then keep closed until the grill reaches the target temperature.
Cool Tip: To quickly stabilize the temp at 600-800°F, leave the lid open for the first 5 minutes and then keep closed until the grill reaches the target temperature.
